You can find White Button mushrooms in almost any grocery store’s produce department. Mild and crunchy, they’re perfect for eating raw in salads and sandwiches, or cooked lightly to add flavor and texture to your recipes. The delicate Oyster mushroom (so named for its appearance, rather than its taste) also has a mild flavor, but is chewier and meat-like in texture. Very little cooking is needed with Oyster mushrooms, making them particularly popular in stir-fried dishes, light sauces, omelettes, and as a meat substitute on pizza.
