Picking The Perfect Peach

At the market, look for peaches with golden yellow or creamy white undertones. Peaches often have red or rose marks, from speckles to broad regions. Just remember that redness has nothing to do with ripeness; a peach can be ripe and have little or no red coloring. Don’t buy peaches that are bruised, have soft brown spots, or have white mold.

The true test of ripeness is aroma. You should be able to smell the peach’s sweet aroma. If you can’t detect even a hint of a peachy smell, then it’s been picked too early and will not sweeten further as it ripens. Hard peaches are no good. The best ones are firm to slightly soft and give a little when you gently hold them.
