Another low starch variety that’s great for boiling, roasting, steaming, and salads is the round red potatoes. These potatoes are harvested in the summer and fall. Characterized by their waxy texture, rosy red skin and white flesh, they tend to be smaller than other varieties. These potatoes shouldn’t be mashed.

Lesser known potatoes include blue and purple potatoes, which are popular in South America and have a unique nutty flavor and a medium starch content, with flesh that ranges from dark blue to lavender to white. Although they make for decorative mashed potatoes and salads, they don’t have as much flavor as other varieties.
Another lesser known variety is the Bintje, which is very similar to the Yellow Finn and Yukon Gold.
