Roma tomatoes, also known as Italian plum or Italian tomatoes, are meaty and have small seeds. They're egg-shaped, can be red or yellow, and are available year round. Select ones that are firmly plump, have taut skin and a deep color.

Cherry tomatoes are a favorite for salads and garnish, because of their small size (they're about an inch in diameter), bright color (red or yellow-gold), and excellent flavor. When choosing the type of cherry tomato you want to use, consider the degree of flavor you're looking for. Yellow-gold tomatoes don't have as strong a flavor as their red counterparts because they're lower in acidity. Select ones that are uniform in color.
