What Exactly Is Soy?

Soy is a legume, much like peanuts, navy beans, kidney beans, and other dried beans. It is a fast growing, hardy plant that was traditionally used in crop rotation to

enrich the soil. It is a very effective nitrogen fixative and resists pests. The Chinese used it this way until the discovery of fermentation (1100-300 BC). Fermented products include tempeh, natto, miso, and soy sauce. Sometime after this, the Chinese discovered precipitation techniques, using the chemical equivalents of either plaster of Paris or Epsom salts, that made a smooth curd, which we know as “tofu”. From China, these products spread to Japan and Indonesia. Today, they are readily available in many supermarkets all over the U.S.
